Banana Pancakes

Serving size: 1 person

Ingredients:

  • 1 banana
  • 2 eggs
  • coconut oil/olive oil. (optional)

Steps:

  1. Mash the banana into a ball until it is completely smooth and creamy
  2. Stir eggs and mashed banana together until well blended.
  3. Spray the pan with coconut oil (optional choice)
  4. Pour or scoop the batter on the pan or the griddle as a portion size you decide.

Topping with seasonal fruits (I like to go with a sprinkle of cinnamon and blueberries).
